Chia Seed Cacao Smoothie Pudding (gf, df, v)

Chia Seed Pudding Ingredients:

1/4 cup chia seeds

1/2 cup frozen mixed berries

1/4 avocado
-
1 tbsp raw cacao powder
-
2 tbsp of raw vegan protein powder (optional)

1 tsp of 100% pure vanilla extract
-
1/2 cup coconut water
-
1/2 cup of full fat coconut milk or any other dairy free milk alternative
Topping Ingredients:

Vanilla Nudie coconut yoghurt

1 fig
-
Raw Cacao Nibs or alternatively grate 85% Dark Chocolate
Method:

In a high speed blender, blend together the mixed berries, avocado, cacao powder, protein powder, vanilla extract, coconut water and milk.

Place the chia seeds in a glass and top with the blended smoothie. Combine the two together by mixing the chia seeds evenly through the smoothie with a spoon. Place in the fridge for 15-20mins for the chia seed pudding to thicken.

Once the pudding thickens, top with toppings of choice. I used vanilla coconut yoghurt, sliced fig and cacao nibs.
