Chia Seed Cacao Smoothie Pudding (gf, df, v)

Chia Seed Pudding Ingredients:

  • 1/4 cup chia seeds

  • 1/2 cup frozen mixed berries

  • 1/4 avocado

  • 1 tbsp raw cacao powder

  • 2 tbsp of raw vegan protein powder (optional)

  • 1 tsp of 100% pure vanilla extract

  • 1/2 cup coconut water

  • 1/2 cup of full fat coconut milk or any other dairy free milk alternative

Topping Ingredients:

  • Vanilla Nudie coconut yoghurt

  • 1 fig

  • Raw Cacao Nibs or alternatively grate 85% Dark Chocolate


  1. In a high speed blender, blend together the mixed berries, avocado, cacao powder, protein powder, vanilla extract, coconut water and milk.

  2. Place the chia seeds in a glass and top with the blended smoothie. Combine the two together by mixing the chia seeds evenly through the smoothie with a spoon. Place in the fridge for 15-20mins for the chia seed pudding to thicken.

  3. Once the pudding thickens, top with toppings of choice. I used vanilla coconut yoghurt, sliced fig and cacao nibs.

Serves 1
