Macadamia Ricotta Cheese
(V, DF, GF)
* 2 cups macadamia nuts
* 1x tbsp lemon juice
* 1/2 cup liquid (I used 1/4 cup water and 1/4 cup coconut milk)
* 1 tsp yeast flakes can be added if you want a more cheesy taste. (optional)
* salt and pepper to taste
1) Add all ingredients to a blender or food processor and mix together at high speed until a ricotta cheese-like consistency forms.
**If using a blender, you may like to chop the nuts in halves first, so they are easier to blend.
